Author Bio:
Mr. Wilson Henry Chan was born in Hong Kong in 1961. Funded by the scholarship of Dr. Ching-wen Chu, Mr. Chan went to the U.S.A. in 1982 and studied business management at Vincennes University and Indiana University, Bloomington. After graduation, Mr. Chan worked in the macroeconomic and marketing research field and has a wide range of interests, including astronomy, geography, archaeology, history, chemistry, medicine, and philosophy.
In 2012, Mr. Chan was greatly shocked to witness his father’s surprise death only 45 days after being diagnosed, who never smoked or drank but died of lung cancer suddenly at age 86. His mother has always been smart in her entire life but suffered from Alzheimer’s disease after age 87, which made him even more puzzled why people would get sick for unknown reasons. Mr. Chan believes that everything must have a cause, and the underlying reason can be traced and explained for every disease.
Since then, Mr. Chan has devoted himself to studying the pathogenesis of cancer and dementia. After sustained and detailed observation and recording, he finds out all high-temperature cooking food would bring harmful substances to our bodies, bringing a different degree of unexpected and undesired inflammation and outcomes. Many other chronic diseases such as diabetes, cancer, cardiovascular problems, stroke, arthritis, dementia, depression, neurodegeneration, and autoimmune disorders are all related to how we cook and treat food.
Combined with his understanding of Eastern and Western history and knowledge in archaeology, Mr. Chan has developed a unique view showing that human health and history development are inextricably related to “eating.” And the way we cook and prepare food will affect our bodies and determine the fate of our health, and even the rise and fall of a nation or an empire.
